What better way can you add corn bread as a side to meal then with cheesy, moist, but yet crisp corn bread. I love this recipe because it takes corn bread from being a dessert bread smothered with grape jelly to a hearty dinner bread that can be used as a side or to top you favorite casseroles.



Cast Iron Corn Bread Recipe


1 cup Flour

3/4 cup Corn Meal

2 Tbs Sugar

2 1/2 tsp Baking Powder

1/4 tsp Salt

2 Beaten Eggs

1 Cup Milk

1/4 cup Melted Butter

1 Tbs Butter

1 cup Shredded Cheddar Cheese


Pre-heat your oven to 400 degrees. Place the 1 Tbs Butter into your 10 inch Cast Iron and place into your warming oven to warm the pan and melt the butter. Stir together all of your dry ingredients in to a medium bowl. Make a well in the dry ingredients and add your wet ingredients, then mix. Stir in 3/4 of the cheese and mix until just moist. Pull your warm pan from the oven and pour your batter into your hot pan. Sprinkle the remaining cheese on to of the batter. Return pan to the oven and bake for 15 to 20 minutes or until batter is firm, golden, and butter knife can be removed clean.
