This recipe is perfect for the cranberry season. Every fall I try to buy just a couple extra bags of cranberries to store in my freezer. You can use either fresh or frozen cranberries!

Makes 2 loaves.


4 cups flour

2 cups sugar

3 tsp baking powder

1/2 tsp salt

2 tsp baking soda

3/4 cup lemon juice concentrate

3/4 cup water

4 TBLS oil

Juice and zest of one lemon

2 eggs

2 cup cranberries


Mix dry ingredients. Add the rest of the ingredient and stir well. Add and stir in cranberries. Pour into greased 5"x9" loaf pans. Bake for 55 minutes in a 350 degree oven.
